att There are also many small jars of truffles on the market termed "2nd cooking". This means that when the mushroom was first sterilised, the truffle juice was removed for other uses or to be sold separately. By the time it goes through a second sterilisation process, this truffle has lost nearly all its flavour. Ensure that when you buy preserved truffles, you look for "premier cuisson" (first cooking).
