truffe The Périgord truffle (Tuber melanosporum Vitt.) is without doubt the most famous of all the black truffle varieties. And, of course, it is found in the Périgord, a province located in the Aquitaine region in the South-West of France. The truffle association, the Union Régionale de Trufficulteurs (URTA), which has its seat at the Dordogne Chamber of Agriculture, also meets here.
However, this truffle can also be found in other areas of France (in the South-East) and in other European countries too (Spain and Italy). The "truffe brumale" (Tuber brumale Vitt.), the winter truffle is harvested in the same season and is also of culinary interest, even though its price is two or three times less.
