Truffle culture
cavage There is a local word for hunting and harvesting truffles in the PĂ©rigord: "caver". The season opens on the 1st of December and closes at the end of February, with a substantial drop in production from mid-February onwards.
Peak maturity is generally in the month of January, but the more advanced the season, the more the much-sought after aroma and flavour becomes concealed.
